Gathered from the American Paddlefish (nicknamed "spoonbill" due to its unique snout), these fish come from the Mississippi and Tennessee rivers and provide a unique replacement for the classic Sevruga caviar. The American Paddlefish is closely related to the Caspian Sevruga, as their caviar is similar in taste, color, and size. The caviar has a hue that changes from light to dark steel gray, and has a buttery flavor to it. This type of fish is not a sturgeon species, but rather the Polyodon Spathula, which is found in the Mississippi River. Paddlefish caviar is favored by many chefs and foodies, and can be seen served with creme fraiche or blinis as an appetizer or garnish.

The average shelf life of American Paddlefish caviar varies based on storage conditions such as ambient temperature and the of container. Unopened caviar in its original container stored at -2℃ to 4℃ will maintain its prime freshness up to 4 months. To avoid introducing contaminants once opened it should only be picked with a sterile utensil. Once opened we recommend it to be consumed within several days. Always keep remaining caviar in the fridge.

In order to maintain freshness we package our products well. Our packaging includes a Styrofoam insulated refrigerator container with ice gel packs, which keeps the caviar fresh for several days. Regions with colder temperature and weather will keep the products fresh for a longer period.
Our American Hackleback Sturgeon caviar comes packaged in three different containers. When purchasing you have the option to select the weight and container. The available options are listed in the selection field and there is no mix-and-match. The three containers are:

The Blue Tin container dominated the market for a long time and currently it is the most popular and known container, but as everything progresses another type of caviar packaging was introduced, the Gold Tin.
