aOur Paddlefish Roe is a uniquely American caviar, harvested from wild-caught Polyodon spathula (American Paddlefish, also known as Spoonbill) in the Mississippi River basin. Paddlefish is one of the few remaining primitive fish species in North America, and its roe has been celebrated as a premium domestic caviar for decades.
Paddlefish roe features small, dark gray to black pearls with a smooth, earthy flavor that many enthusiasts compare to Osetra or Sevruga in character. It delivers a clean, satisfying brininess with a subtle nutty depth, making it an outstanding value among premium American caviars.
