aOur Salmon Roe selection features three exceptional varieties sourced from wild-caught Chum, Pink, and Sockeye salmon harvested in the cold, pristine waters of the North Pacific. Known collectively as red caviar, also called ikura, salmon roe is prized for its vibrant color, natural freshness, and satisfying pop, with flavor profiles ranging from delicately sweet to boldly briny.
Chum Salmon Roe (Oncorhynchus keta): Renowned for its exceptionally large pearls displaying hues from golden orange to deep amber. Its firm texture and rich briny-sweet flavor make it one of the most sought-after types of red caviar.
Pink Salmon Roe (Oncorhynchus gorbuscha): Features medium to large translucent orange-pink pearls. Offers a clean briny taste with gentle sweetness, creating a balanced profile that works beautifully for sushi, canapés, and modern culinary presentations.
Sockeye Salmon Roe (Oncorhynchus nerka): Distinguished by its small to medium pearls and deep, rich orange color. Its bold, ocean-forward flavor appeals to those who prefer a more intense and pronounced caviar experience.
All of our salmon roe caviars are prepared using the traditional Malossol method, meaning “little salt” in Russian. This gentle curing process preserves the roe’s natural flavor, texture, and aroma without overpowering its character. Serve well chilled on sushi, blinis with creme fraiche, or toast points. Pairs beautifully with chilled vodka, champagne, or a crisp dry white wine.
